Coconut & Lime Prawns
Ingredients:
1kg raw prawns - deveined and butterflied - leave tail on
1 cup plain flour
1 tbsp Zest Element Lime Salt (or lemon if you prefer)
1 egg
1/2 cup milk
2 cups coconut shreds
Good dash oil - for frying
Method:
While oil is heating in a small saucepan
Get 3 bowls
In first, make egg wash by beating the egg and milk together
In second, add 1 tbsp of Zest Element Lime powder to the plain flour.
In third, add coconut shreds
Toss the prawns in the lime salted flour, then into the egg wash, then coat them in the coconut shreds
Add prawns to the hot oil until golden
Pop onto paper towels to drain any excess oil
Serve with extra lime salt - YUM
