No Bake Lime Cheesecake

Ingredients
- 150g Granita biscuits (or similar) I love Digestives!
- 75g butter, melted
- 2 tbsp Zest Element Lime Powder
- 75g butter, melted
- 2 tbsp lime powder
- 500g cream cheese, softened
- 395g can sweetened condensed milk
- 2 tbs caster sugar
- 1 tsp vanilla extract
- 1 tbsp Zest Element Lime Powder for decoration
- ¾ cup thickened cream, whipped
Instructions
- Line base of a 20 cm spring-form pan with baking paper.
- Place biscuits into a food processor, process until fine crumbs form. Add melted butter and process until well combined. Spoon mixture into the base of the prepared pan. Refrigerate for 30 minutes.
- Beat rest of ingredients (except cream) until smooth.
- Gently fold through whipped cream. Spoon mixture into the pan.
- Cover and chill for 5 hours or overnight
- Or to make a super quick version -
- Put biscuit base in bottom of ramekins and pop in fridge
- Blend rest of ingredients together until smooth - top the ramekins up and pop in fridge for at least half hour - sprinkle Zest Element Lime powder on top to finish! still yummy....
