No Bake Lime Cheesecake

Yield 8

Ingredients:

150g Granita biscuits (or similar) I love Digestives!

75g butter, melted

2 tbsp Zest Element Lime Powder

75g butter, melted

2 tbsp lime powder

500g cream cheese, softened

395g can sweetened condensed milk

2 tbs caster sugar

1 tsp vanilla extract

1 tbsp Zest Element Lime Powder for decoration

¾ cup thickened cream, whipped

Method:

Line base of a 20 cm spring-form pan with baking paper.

Place biscuits into a food processor, process until fine crumbs form. Add melted butter and process until well combined. Spoon mixture into the base of the prepared pan. Refrigerate for 30 minutes.

Beat rest of ingredients (except cream) until smooth.

Gently fold through whipped cream. Spoon mixture into the pan.

Cover and chill for 5 hours or overnight

Or to make a super quick version -

Put biscuit base in bottom of ramekins and pop in fridge

Blend rest of ingredients together until smooth - top the ramekins up and pop in fridge for at least half hour - sprinkle Zest Element Lime powder on top to finish! still yummy....
